Cooking up a storm
When baking during the summer months you really want to find something that is fresh and gives you a little bite to enjoy either indoors or outdoors. This recipe is coming from the new Resident Engagement Manager in Cluid Anthony Burrowes. The recipe is for a carrot cake. The total cost of the ingredients below from a local supermarket is €14:00 (you would be able to make multiple cakes with the bought ingredients)
Ingredients
Whole Wheat Flour – 130g
Baking Powder – 1 teaspoon
Baking Soda – 1 teaspoon
Ground Cinnamon – 1 teaspoon
Orange – zest of 1
Carrot – 200g grated
Shredded coconut – 55g
Pecan pieces – 30g
walnuts – 1g
Sunflower oil – 60ml
Granulated Sugar – 205g
Whole milk yogurt – 60g
Egg – 2
Icing Sugar – 120g
Butter – 2 tablespoons
Cream Cheese – 225g
Method
Pre- heat over to 175C
Line 2a loaf pan with grease proof paper
Add the flour, baking powder, baking soda, ground cinnamon, orange and mix into a clean bowl
Add carrot
Mix in the coconut, pecan pieces, walnuts
Add in the sunflower oil, can sugar and the yogurt and mix thoroughly
Fold in the eggs, ensuring that no egg can be seen in the mix
Transfer to loaf tin and place in the oven for 40 minutes
While the cake is baking add the icing sugar, butter and cream cheese into a new clean bowl and mix.
When the cake is fully baked wait until the cake is cooled and then top the cake off with the cream cheese mix.
